Although every Ellidge and Farley frying range is constructed to meet the customers personal requirements, all our ranges incorporate a number of standard design and safety features.

All units have a mild steel-section tubular framework and mild steel pans made with 1/8" (3mm) plate sides and 1/4" (6mm) plate studded bottoms. Standard pan sizes are 24" (600mm) x 24" x 10" (250mm) deep.
 
Each pan is heated by 120,000 BTU/hour, Duoflam gas burners to produce an eight minute frying cycle. The burners are controlled by an electronic unit which provides automatic ignition, flame-failure protection and an indicator lamp to confirm that the pilot flame is established.

The temperature of the pan contents are controlled by a thermostat with visual temperature indication and a maximum setting of 400 degrees fahrenheit plus a separate non self re-setting over ride cut-out switch to prevent accidental overheating beyond 425 degrees fahrenheit.

Microchip controlled electronic thermostats with a slow fat-melt start up cycle can be installed as an optional extra, with or without digital readout of pan temperature.

Chip boxes and display cabinets are electronically heated with infra-red ceramic elements and simmerstat controls.

All ranges are fitted with a motorised extractor fan, with a divided back duct which keeps gas and steam products separate until in a safe area. Dampers are fitted to both gas steam extraction points and all back ducts have cleaning doors and effluvium traps. Fire proof collars are incorporated wherever ducting passes through wooden floors, walls etc.

All electrics are independently fused with circuit-breakers and control switches built into the range, as well as mains gas cook and isolator switch.

For extra safety a Pressure Sensitive Switch is built into the main duct to monitor the performance of the Gas Fume Extraction System. If the extraction rate is not at a safe level the gas burners are automatically switched off.

Also available as an optional extra is a pump and filtration system, in which hot cooking oil can be cleaned and moved from one pan to another in complete safety or stored for future use.

An extra feature of Ellidge and Fairley ranges is the provision of a stainless steel base plate which acts as an insulation panel for any type of floor covering and also provides total vision of all burners and pilots.


Included in the price of all Ellidge and Fairley ranges is a set of utensils, delivery, installation and all gas and electric connections to a suitable mains supply.
